This venison scotch eggs recipe builds from a base of ground venison breakfast sausage and bakes into a crispy, savory, breakfast option.
Ingredients needed
- 4 hardboiled eggs
- 1 pound venison breakfast sausage
- 1 cup panko bread crumbs
- 1 cup flour
- 2 eggs
How to make venison scotch eggs
- Preheat oven to 400° F.
- Boil the four eggs, then rinse with cold water and set aside to cool. When cooled, carefully peel.
- In a small bowl, whisk two eggs. In a separate bowl add the flour. In a third bowl add the bread crumbs.
- Wrap each hard-boiled egg with the breakfast sausage so that the egg is completely covered.
- Then, roll the sausage-covered egg in the flour, then in the whisked egg, then in the panko so that it’s fully covered. Place onto a lined or non-stick baking sheet and continue with the remaining eggs.
- Bake for 35-45 minutes.
- Remove and serve immediately.

Will any sausage work with venison?
We use ground pork sausage, but any ground sausage should also work because the goal is adding the necessary fat component to make venison sausage.
Do I have to add sausage to the venison?
Yes, venison alone does not have enough fat content. Combining venison with a ground pork, beef, or lamb sausage will increase the fat and salt content, creating a delicious sausage result.
