Savory and delicious cheesy smoked potatoes – the perfect summer grilling side dish! Combine cubed potatoes with a creamy cheese and bacon mixture, then smoke directly on your pellet grill or smoker.
We love our Traeger pellet grill – it’s like having an oven right out on the patio. No heating up the kitchen in the summer time. You can cook everything on a Traeger – from meats, to sides, to even desserts!
These cheesy smoked potatoes are the perfect side dish for the summer grilling season. You can bake them right on your Traeger grill or any other indirect smoker. Doing this gives these cheesy potatoes a deliciously subtle smoky flavor.
Note: we found this recipe years ago inside a Taste of Home magazine. Since then, we’ve enjoyed it for many summer grill seasons and recently adapted it into a Traeger recipe!
Ingredients Needed
- 5 pounds red potatoes
- 1 pound bacon
- 24 oz. cheddar cheese block
- 12 oz. sharp cheddar cheese block
- 1/2 white onion – chopped
- 1 cup mayo
- 1 cup sour cream
- 1/2 tsp. salt
- 1/2 tsp. black pepper
How to make cheesy smoked potatoes
- In a large pot, boil the red potatoes, then drain and let cool. Once cooled, cut them into 1/2 inch cubes. Transfer to a large mixing bowl.
- Cook the pound of bacon, set aside to drain and cool, then crumble and add to the bowl with the potatoes.
- Cut both of the blocks of cheese into 1/2 inch cubes, and add to the mixing bowl with the potatoes and bacon.
- Add the remaining ingredients to the bowl and mix to combine. Transfer to greased 9×13 baking dish.
- Preheat the Traeger grill or indirect smoker to 325 degrees F. Place the baking dish onto the preheated grill, making sure it’s over indirect heat, and bake for 60 minutes.
- Remove and serve hot.

It depends on the recipe, but cooking on a Traeger is essentially the same as cooking in your oven. For most recipes, the time and temperature are the same as the oven-cooking time. But, always double check your recipe for specific Traeger cooking times.

A pellet grill uses wood pellets, and combine the best of both worlds between grills, smokers, and indoor kitchen ovens. You can also control the temperature more easily with a pellet grill.
