Boil the four eggs, then rinse with cold water and set aside to cool. When cooled, carefully peel. In a small bowl, whisk two eggs. In a separate bowl add the flour. In a third bowl add the bread crumbs.
Wrap each hard-boiled egg with the breakfast sausage so that the egg is completely covered.
Then, roll the sausage-covered egg in the flour, then in the whisked egg, then in the panko so that it’s fully covered. Place onto a lined or non-stick baking sheet and continue with the remaining eggs.
