– 2 lbs. chuck roast – 1 Tbsp. chili powder – 1 tsp. paprika – ½ tsp. cumin – ½ tsp. salt – ½ tsp. pepper – ¼ cup lime juice – 3 Tbsp. tomato paste – ¼ cup beef broth – ¼ cup diced white onion – 1 jalapeño pepper – diced – 1 Tbsp. minced garlic – Corn or flour tortillas

1. Preheat Traeger grill to 300 degrees F. 2. Add the chili powder, paprika, cumin, salt, and pepper in a small bowl and mix to combine. Rub the mixture all over the chuck roast. 3. Place the roast into a dutch oven, and add the remaining ingredients. 4. Cover and smoke for four to five hours or until the meat is tender and shreds easily. 5. Carefully remove the dutch oven from the Traeger and shred the roast using two forks. 6. Let the shredded meat soak in the juice for a few minutes. While the meat is soaking, place your tortillas onto the Traeger for a few minutes on each side to warm them and give them a nice smoky flavor. 7. Remove and serve alongside the shredded beef and your favorite toppings.
