These cheesy smoked potatoes are the perfect side dish for the summer grilling season. You can bake them right on your Traeger grill or any other indirect smoker. Doing this gives these cheesy potatoes a deliciously subtle smoky flavor.

Combine cubed potatoes with a creamy cheese and bacon mixture, then smoke directly on your pellet grill or smoker.

Ingredients

– 5 pounds red potatoes – 1 pound bacon – 24 oz. cheddar cheese block – 12 oz. sharp cheddar cheese block – 1/2 white onion - chopped – 1 cup mayo – 1 cup sour cream – 1/2 tsp. salt – 1/2 tsp. black pepper

INSTRUCTIONS

1. In a large pot, boil the red potatoes, then drain and let cool. Once cooled, cut them into 1/2 inch cubes. Transfer to a large mixing bowl. 2. Cook the pound of bacon, set aside to drain and cool, then crumble and add to the bowl with the potatoes.

3. Cut both of the blocks of cheese into 1/2 inch cubes, and add to the mixing bowl with the potatoes and bacon. 4.Add the remaining ingredients to the bowl and mix to combine. Transfer to greased 9×13 baking dish.

5. Preheat the Traeger grill or indirect smoker to 325 degrees F. Place the baking dish onto the preheated grill, making sure it’s over indirect heat, and bake for 60 minutes. 6. Remove and serve hot.
