Ingredients Needed
- 2 Tbsp. olive oil – divided
- ½ cup chopped yellow onion
- 1 Poblano pepper – diced
- 1 pound ground venison
- ¼ tsp. Pepper
- ½ tsp. Salt
- 1 lime – zest and juice
- ¼ cup sour cream
- 1 packet taco seasoning
- 1 ½ Tbsp. cumin
- 2 Tbsp. tomato paste
- 1 Tbsp. minced garlic
- ½ cup water
- 4 flour tortillas
- 2 cups Mexican blend shredded cheese
- Pico de gallo, guacamole, cilantro, and other toppings of your choice
How to make Venison Quesadillas
- Add 1 Tbsp. olive oil to a skillet and heat over medium heat. Add the chopped onion and Poblano pepper and cook until softened.
- Add the ground venison, salt, and pepper to the skillet and cook thoroughly.
- While the venison is cooking, prepare the lime crema. Add the sour cream to a small bowl. Zest and juice ½ lime and add to the sour cream mixture. Stir to combine. It should be thin enough to drizzle over the quesadillas. If too thick, add 1 tsp. of water at a time until it’s thinned. Season with salt to taste. Refrigerate until ready to serve.
- Once the venison is browned, add the taco seasoning, cumin, tomato paste, minced garlic, water, and lime juice and stir to combine. Let cook for 1-2 minutes, then remove from heat.
- Start preparing your quesadillas. Lay one flour tortilla flat and add about ½ cup of the meat mixture to one side of the tortilla. Spread to cover ½ the tortilla fully. Top with shredded cheese, then fold the tortilla over to cover.
- Heat 1 tbsp. olive oil in a large skillet over medium heat. Add the folded tortilla to the skillet, let brown, then flip and brown the other side. Remove from heat and continue with the remaining tortillas.
- Once they’re all browned, cut each in half, top with your favorite toppings, and serve!
