Elk Unstuffed Peppers

Elk Unstuffed Peppers are a tasty and filling meal that’s perfect for any occasion. Made with ground elk meat, colorful bell peppers, and a variety of flavorful ingredients, this dish is both nutritious and satisfying.

•  Olive oil •  Ground elk •  White onion •  Yellow pepper •  Red pepper •  Tomato sauce •  Fire-roasted diced    tomatoes •  Chicken broth

INGREDIENTS

Heat the olive oil in a large, deep skillet over medium heat. Add in diced onion and pepper. Sauté for a few minutes until softened. Then, add in the ground elk and cook thoroughly.

Step 1

Next, add in the diced tomatoes, tomato sauce, chicken broth, garlic powder, salt and pepper. Bring to a boil and then reduce to low and simmer.

STEP 2

While the sauce is simmering, make your rice according to package directions.

Step 3

Once the pepper mixture is ready, serve in a bowl with the cooked rice. Garnish with chopped parsley.
