Elk Breakfast Hand Pies

Made with savory elk sausage, scrambled eggs, and cheddar cheese, all wrapped up in a flaky, buttery pie crust, these hand pies are a delicious way to start your day.

•  Ground elk •  Ground breakfast sausage •  Olive oil •  Salt •  Pepper •  Unsalted butter •  Eggs •  Puff pastry •  Monterey jack or     cheddar cheese

INGREDIENTS

In a skillet, heat the olive oil over medium heat and add the ground elk and sausage. Season with salt and pepper and cook until no longer pink and set aside.

Step 1

In a separate skillet, melt the butter over medium heat. Then, add the eggs, season with salt and pepper and scramble.

STEP 2

Place 2 sheets of puff pastry dough onto a lightly-floured surface and unfold. Cut each sheet into 6 rectangles, 12 total.

Step 3

Leaving a 1/2-inch border, divide the shredded cheese among the six rectangles. Then, divide the cooled scrambled eggs over the cheese.
