If you are looking for an easy dinner that will leave your family absolutely clueless that they are eating venison, look no further! These Italian stuffed bell peppers are what you need to make your venison absolutely delicious.
No venison? No problem! Sub the meat with elk or ground beef! Either way these peppers will lead to mouth-watering results.
Ingredients needed
- ½ cup uncooked rice
- 2 Tbsp. olive oil
- 1 medium yellow onion, chopped
- 2 Tbsp. tomato paste
- 2 Tbsp. minced garlic
- 1 lb. ground venison
- 1 (14.5-oz.) can diced tomatoes
- 1 1/2 tsp. Italian seasoning
- 1 tsp. salt – to taste
- 1 tsp. ground black pepper – to taste
- 6 bell peppers
- 1 cup shredded Mozzarella cheese
- Chopped parsley, for garnish
How to make Venison Stuffed Bell Peppers
- Preheat the oven to 400 degrees F.
- Cook rice according to package directions, then set aside.
- Heat the olive oil over medium heat in a large saucepan. Add the chopped onion to the heated oil and cook until soft. Stir in tomato paste and garlic and cook until fragrant, about 1 minute.
- Add the ground venison to the skillet and cook through.
- Add the cooked rice and diced tomatoes to the skillet, then season with the Italian seasoning, salt, and pepper to taste. Let simmer until liquid has reduced, about 5 minutes.
- Cut the tops off of the peppers and clean out the center. Place the peppers cut side-up into a 9×13 baking dish and brush with a little additional olive oil. Spoon the venison and rice mixture into each pepper.
- Cover the baking dish with foil and bake for 35 minutes.
- Uncover the peppers, top with shredded mozzarella cheese and bake until cheese is bubbly, about 10 minutes.
- Garnish with parsley then serve.
