If you grew up on Hamburger Helper stroganoff but your taste buds have elevated, you’ll want to try this homemade stroganoff recipe using ground elk meat. This recipe can also easily be made with ground venison or ground beef.
Ingredients Needed
- 1 pound ground elk meat
- 1 Tbsp. olive oil
- 1/2 yellow or white onion – chopped
- 1 tsp. minced garlic
- 1 cup fresh sliced mushrooms
- 2 Tbsp. flour
- 1 cup beef broth
- 1 cup heavy cream
- 1 Tbsp. Worcestershire
- 1/4 tsp. black pepper
- 1/2 tsp. salt
- 1/3 cup sour cream
- 8 oz. egg noodles
- fresh parsley – optional
How to make ground elk stroganoff
- Boil the egg noodles according to package directions and set aside.
- Add the olive oil to a large skillet and heat over medium-high heat. Add the ground elk and cook until done.
- Add the finely chopped onion, minced garlic, and fresh mushrooms, and cook until softened.
- Add the flour to the skillet and stir to combine.
- Slowly add the broth, stirring as you add. Then, stir in the heavy cream. Add the Worcestershire and stir. Lastly, season with salt and pepper.
- Reduce heat to low and simmer for five minutes.
- Remove from heat. Add the sour cream and cooked egg noodles, stirring to combine. Garnish with fresh parsley, if desired, and serve immediately.

Could I sub heavy cream with sour cream?

It does already have sour cream in it. You could sub in more sour cream in place of heavy cream, but you may need to increase the broth by 1/2 cup or add water to thin it out a little bit.

Super simple and very tasty. Used a little white wine to deglaze skillet before adding broth and probably over did garlic and parsley, but so worth it.
