Ingredients Needed
- ½ pound ground elk
- ½ pound ground breakfast sausage
- 1 Tbsp. olive oil
- ½ tsp. salt – divided
- ½ tsp. pepper – divided
- 1 Tbsp. unsalted butter
- 9 eggs
- 2 sheets puff pastry (17-ounce) box
- 1/2 cup shredded monterey jack or cheddar cheese
How to make Elk Breakfast Hand Pies
- In a skillet, heat the olive oil over medium heat and add the ground elk and sausage. Season with salt and pepper and cook until no longer pink and set aside.
- In a separate skillet, melt the butter over medium heat. Then, add the eggs, season with salt and pepper and scramble. Set aside to cool completely.
- Place 2 sheets of puff pastry dough onto a lightly-floured surface and unfold. Cut each sheet into 6 rectangles, 12 total. Place 6 of the rectangles in a single layer onto a lined baking sheet.
- Leaving a 1/2-inch border, divide the shredded cheese among the six rectangles. Then, divide the cooled scrambled eggs over the cheese, then top each with the cooked elk mixture
- Wet the outer edge of each piece with water, then top with the remaining 6 puff pastry rectangles. Using a fork, seal the edges all the way around. Cut a 1/2-inch slit in the top of each.
- Bake for 20 to 25 minutes or until puffed and golden-brown.
- Serve immediately.
